Leftover Terry’s Comforting Meatloaf & baked potatoes are one of the easiest leftovers on the planet!! I have been eating this dish since I was a kid.
- Make sure you make enough meatloaf and baked potatoes to have leftovers, based on the size of the group you hope to feed.
- Cut leftover meatloaf and baked potatoes into bite sized cubes, leaving the skin on the potatoes.
- Heat some oil (olive or canola) in a nonstick pan over medium heat. At this point you can add some optional vegetable items and cook until they are done The more veggies you add the further this recipe will s-t-r-e-t-c-h. Additionally, adding all the veggies will make this a one dish meal; just what we all need on a Monday!
Optional Items: Red or green pepper, diced Onion, diced Mushrooms, sliced Broccoli florets (fresh, or leftover cooked broccoli from another dinner)
You get the idea, whatever you like with meatloaf, goes well with this Meatloaf Hash!
After the veggies are cooked, add in your cut up meatloaf and baked potatoes and heat through, don’t overcook. If you are not adding veggies, simply stir the meatloaf and potatoes a few minutes until hot.
Sauce add ins: This is ready to serve as is. But if you prefer additional flavor and moistness to the end product, add any of these condiments, to taste, at the end of cooking, stir in and serve. Start with a tablespoon or so, taste and add more if needed.
Worchestire or Soy sauce, Steak Sauce, Ketchup or BBQ Sauce
